Preparation
- Preheat the oven to 350°F (175°C).
- Cook the quinoa according to package instructions until fluffy, then let it cool.
Mixing
- In a mixing bowl, combine the mashed bananas, eggs, honey or maple syrup, almond milk, baking powder, vanilla extract, cinnamon, and salt. Mix well.
- Fold in the cooked quinoa until well incorporated.
Baking
- Grease an 8x8 baking dish or line it with parchment paper. Pour the batter into the dish and top with any optional add-ins.
- Bake for about 25-30 minutes, or until golden brown and a toothpick comes out clean.
Cooling
- Let the cake cool for a few minutes before slicing.
Notes
Store leftovers in an airtight container in the fridge for up to 4-5 days. Freezes well for individual slices.
