Ingredients
  

Main Ingredients
  • 1 cup quinoa, rinsed Make sure to rinse before cooking.
  • 2 large ripe bananas, mashed The riper, the better for sweetness.
  • 2 large eggs
  • 1/4 cup honey or maple syrup Choose your preferred sweetener.
  • 1/2 cup almond milk Any type of milk can be used.
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 pinch salt
Optional Add-ins
  • nuts, chocolate chips, or dried fruit Add as desired.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cook the quinoa according to package instructions until fluffy, then let it cool.
Mixing
  1. In a mixing bowl, combine the mashed bananas, eggs, honey or maple syrup, almond milk, baking powder, vanilla extract, cinnamon, and salt. Mix well.
  2. Fold in the cooked quinoa until well incorporated.
Baking
  1. Grease an 8x8 baking dish or line it with parchment paper. Pour the batter into the dish and top with any optional add-ins.
  2. Bake for about 25-30 minutes, or until golden brown and a toothpick comes out clean.
Cooling
  1. Let the cake cool for a few minutes before slicing.

Notes

Store leftovers in an airtight container in the fridge for up to 4-5 days. Freezes well for individual slices.
