  • 2 ½ cups all-purpose flour
  • 1 ½ cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature Can substitute with regular milk and vinegar.
  • 2 large eggs, room temperature
  • 2 tablespoons blue food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon vinegar
For the Cream Cheese Frosting
  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
Mixing
  1. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
  2. In another bowl, blend the oil, buttermilk, eggs, blue food coloring, vanilla extract, and vinegar until smooth.
  3. Gradually add the wet mixture to the dry ingredients and mix until combined.
Baking
  1. Pour the batter evenly into prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  2. Allow cakes to cool in pans for 10 minutes, then transfer to cooling racks to cool completely.
Frosting
  1. In a bowl, beat together the cream cheese, butter, and vanilla extract. Gradually add in the powdered sugar until you reach your desired creamy consistency.
  2. Once cakes are cool, layer and frost them generously.

Notes

Tips: For homemade buttermilk, use regular milk with a splash of vinegar. Ensure food coloring is used according to brand recommendations. Decorative sprinkles can enhance the cake's appearance for festive occasions.
