  • 2-3 pieces ripe bananas, mashed The riper, the better!
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 piece egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • a pinch salt
  • 1 cup all-purpose flour And a little extra for dusting the pan
For the Cream Cheese Frosting
  • 4 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat Your Oven: Set your oven to preheat at 350°F (175°C).
  2. Mix the Bananas and Butter: In a large bowl, mix the melted butter with the mashed bananas.
  3. Incorporate Sugar, Egg, and Vanilla: Stir in the sugar, beaten egg, and vanilla extract until well combined.
  4. Add Dry Ingredients: Sprinkle in the baking soda and salt, and fold in the flour gently until just combined.
  5. Pour into Prepared Pan: Transfer the batter to a greased 9-inch round cake pan.
Baking
  1. Bake It Up: Pop it in the oven for about 25 to 30 minutes, or until a toothpick comes out clean.
  2. Cool It Down: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.
Frosting
  1. Frosting Time: In a bowl, beat together softened cream cheese and butter until fluffy.
  2. Slowly add the powdered sugar and vanilla, mixing until smooth. Spread over the cooled banana cake.
