Ingredients
  

For the Shrimp Alfredo Filling
  • 1 pound shrimp, peeled and deveined
  • 1 cup Alfredo sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • to taste Salt
  • to taste Pepper
For the Burrito Bites
  • 4 large flour tortillas
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup breadcrumbs (Panko recommended for extra crunch)
  • as needed Vegetable oil for frying

Method
 

Cooking the Shrimp
  1. In a skillet over medium heat, cook the peeled and deveined shrimp with garlic powder, salt, and pepper until they turn pink and opaque, about 3-4 minutes. Remove from heat and let cool slightly.
Mixing the Filling
  1. In a large bowl, combine the cooked shrimp, Alfredo sauce, mozzarella cheese, and Parmesan cheese. Stir until well blended.
Assembling the Burrito Bites
  1. Lay a flour tortilla flat on a clean surface. Spoon a generous amount of the shrimp Alfredo mixture onto the center, fold the sides over, and roll it up like a burrito. Repeat for all tortillas.
Preparing for Frying
  1. Set up a breading station with flour, beaten eggs, and breadcrumbs. Dip each burrito into the flour, then the egg, and finally coat with breadcrumbs.
Frying the Bites
  1. Heat vegetable oil in a skillet or fryer to 350°F (175°C). Fry each burrito bite in batches for 3-4 minutes or until golden brown. Remove and let drain on paper towels.
Serving
  1. Serve hot with a side of marinara or additional Alfredo sauce for dipping.

Notes

Shrimp substitutes can be used (chicken or veggies). Filling can be made ahead and stored in the fridge. If burritos come apart while frying, don't worry—dipping sauces can cover up any kitchen mistakes.
