Ingredients
  

For the Crust
  • 1 ½ cups crushed graham crackers or chocolate cookies for extra richness
  • cup granulated sugar
  • cup melted butter
For the Cheesecake Filling
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped cream
  • ½ cup shredded coconut
  • ½ cup chopped pecans
  • 1 cup semi-sweet chocolate chips, melted the star of the show!
  • 1 tsp vanilla extract
For the Topping
  • Extra whipped cream, toasted coconut, and chopped pecans for garnish

Method
 

Make the Crust
  1. In a bowl, mix the crushed graham crackers, sugar, and melted butter until well combined.
  2. Press this mixture into the bottom of a 9-inch springform pan.
Prepare the Filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth and fluffy.
  2. Gradually add in the powdered sugar and continue mixing until it’s perfectly blended.
  3. Gently fold in the whipped cream, shredded coconut, chopped pecans, melted chocolate, and vanilla extract.
Assemble the Cheesecake
  1. Pour the cheesecake filling over the cooled crust, smoothing it out with a spatula.
  2. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
Serve and Enjoy
  1. Once chilled, remove from the pan. Top with whipped cream, toasted coconut, and chopped pecans.
  2. Slice and savor!
