Method
Make the Crust
- In a bowl, mix the crushed graham crackers, sugar, and melted butter until well combined.
- Press this mixture into the bottom of a 9-inch springform pan.
Prepare the Filling
- In a large mixing bowl, beat the softened cream cheese until smooth and fluffy.
- Gradually add in the powdered sugar and continue mixing until it’s perfectly blended.
- Gently fold in the whipped cream, shredded coconut, chopped pecans, melted chocolate, and vanilla extract.
Assemble the Cheesecake
- Pour the cheesecake filling over the cooled crust, smoothing it out with a spatula.
- Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
Serve and Enjoy
- Once chilled, remove from the pan. Top with whipped cream, toasted coconut, and chopped pecans.
- Slice and savor!
