Cake Ingredients
  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder for rich dark chocolate flavor
  • 1 ¾ cups granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup boiling water to keep the cake moist
  • 1 ½ cups fresh blackberries the stars of the cake
Frosting Ingredients
  • 1 cup unsalted butter softened
  • 3 ½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients and mix until just combined.
  4. Carefully pour in the boiling water and mix.
  5. Gently fold in the blackberries.
Baking
  1. Divide the batter evenly between two greased round cake pans.
  2. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the cakes to cool in the pans for about 10 minutes, then turn them out onto wire racks to cool completely.
Frosting
  1. In a medium bowl, beat together the softened butter, powdered sugar, cocoa powder, heavy cream, and vanilla until light and fluffy.
Assembling the Cake
  1. Spread a generous layer of frosting between the cake layers and atop the cake.
  2. Garnish with fresh blackberries on top.

Notes

If your frosting is too thick, add a splash more cream until desired consistency is reached. Blackberries can burst during baking but will still add flavor.
