Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add the buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients and mix until just combined.
- Carefully pour in the boiling water and mix.
- Gently fold in the blackberries.
Baking
- Divide the batter evenly between two greased round cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes, then turn them out onto wire racks to cool completely.
Frosting
- In a medium bowl, beat together the softened butter, powdered sugar, cocoa powder, heavy cream, and vanilla until light and fluffy.
Assembling the Cake
- Spread a generous layer of frosting between the cake layers and atop the cake.
- Garnish with fresh blackberries on top.
Notes
If your frosting is too thick, add a splash more cream until desired consistency is reached. Blackberries can burst during baking but will still add flavor.
