Ingredients
  

For the crust
  • 1.5 cups all-purpose flour
  • 0.5 cups powdered sugar
  • 0.5 cups unsweetened cocoa powder
  • 0.5 cups butter (melted)
For the filling
  • 1 cup dark chocolate chips Can substitute with milk chocolate chips if preferred.
  • 1 cup fresh raspberries Frozen raspberries can be used in a pinch.
  • 0.5 cups sweetened condensed milk Can substitute with coconut milk or evaporated milk for a lighter option.
  • 1 teaspoon vanilla extract
  • 1 whole egg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch pan with parchment paper, leaving some overhang for easy removal later.
  2. In a mixing bowl, combine the flour, powdered sugar, cocoa powder, and melted butter. Mix until well combined, resembling damp sand. Press this mixture evenly into the bottom of your prepared pan.
Filling
  1. In a small saucepan over low heat, melt the dark chocolate chips with the sweetened condensed milk. Stir until smooth, then remove from heat to cool slightly.
  2. Add the egg and vanilla to the chocolate mixture and mix well.
Assembly
  1. Pour the chocolate filling over the crust and spread it evenly. Gently sprinkle fresh raspberries over the top.
Baking
  1. Bake in the preheated oven for about 25-30 minutes, until the filling is set but has a slight jiggle in the middle.
  2. Allow to cool for about 10 minutes in the pan, then lift the bars out using the parchment overhang and let cool completely on a wire rack.
  3. Cut into squares or rectangles once cooled.

Notes

Store leftovers in an airtight container in the fridge for up to a week. These bars are perfect for sharing at gatherings, but feel free to keep them all for yourself!
