  • 1 lb beef (sliced thinly)
  • 8 oz mushrooms (sliced)
  • 2 tbsp curry powder
  • 1 can coconut milk (full-fat for creaminess)
  • 1/4 cup creamy peanut butter
  • 1 tbsp soy sauce
  • 2 ripe mangos (diced)
  • 1/2 medium red onion (finely chopped)
  • 1 unit lime (juiced)
  • to taste salt and pepper
  • to taste olive oil (for cooking)
  • Fresh cilantro for garnish optional

Method
 

Cooking the Beef and Mushrooms
  1. In a large skillet, heat a drizzle of olive oil over medium-high heat. Add the beef slices and season generously with salt and pepper. Cook until browned—about 3-5 minutes.
  2. Add the sliced mushrooms and stir everything around. Let them cook for about 5 minutes until they are nicely softened.
  3. Sprinkle the curry powder over the beef and mushrooms. Stir well to coat all the ingredients. Then, pour in the coconut milk and add the creamy peanut butter. Stir to combine.
  4. Let the mixture simmer for 10-15 minutes over low heat. Taste and adjust the seasoning if needed.
Preparing Mango Salsa
  1. In a bowl, combine diced mangos, red onion, lime juice, and a pinch of salt. Stir gently.
Serving
  1. Ladle the curried beef and mushrooms onto a plate, top with fresh mango salsa, and sprinkle with cilantro before serving.

Notes

Make it nut-free by replacing peanut butter with sunflower seed butter or tahini. For a spicy kick, add red pepper flakes or hot sauce.
