Preparation
- Start by peeling and cubing the sweet potatoes.
- In a large mixing bowl, combine the cubed sweet potatoes with brown sugar, melted butter, vanilla, cinnamon, and salt. Mix until well-coated.
Cooking
- Transfer the mixture into your crockpot. Set a timer for a little less than two hours.
- Cover and cook on low for about 6-7 hours or on high for 3-4 hours.
- About 30 minutes before serving, sprinkle mini marshmallows on top and let them puff up.
- Before serving, stir to mix the caramelized marshmallows through the sweet potatoes.
Notes
You can enhance flavor with nutmeg or ginger. Store leftovers in an airtight container for up to 3 days. This dish can be made vegan by substituting butter with coconut oil.
