  • 4 medium sweet potatoes, peeled and cubed
  • ½ cup brown sugar
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup mini marshmallows for topping

Preparation
  1. Start by peeling and cubing the sweet potatoes.
  2. In a large mixing bowl, combine the cubed sweet potatoes with brown sugar, melted butter, vanilla, cinnamon, and salt. Mix until well-coated.
Cooking
  1. Transfer the mixture into your crockpot. Set a timer for a little less than two hours.
  2. Cover and cook on low for about 6-7 hours or on high for 3-4 hours.
  3. About 30 minutes before serving, sprinkle mini marshmallows on top and let them puff up.
  4. Before serving, stir to mix the caramelized marshmallows through the sweet potatoes.

Notes

You can enhance flavor with nutmeg or ginger. Store leftovers in an airtight container for up to 3 days. This dish can be made vegan by substituting butter with coconut oil.
