  • 4 pieces boneless, skinless chicken breasts
  • 2 cans cream of mushroom soup (10.5 oz each) You can use low-fat version if preferred.
  • 1 cup chicken broth Homemade or store-bought.
  • 1 packet ranch seasoning mix Adds extra flavor.
  • 1 cup sliced mushrooms Fresh or canned.
  • to taste salt and pepper For seasoning.
  • optional fresh herbs like thyme or parsley For garnish.

Method
 

Preparation
  1. Rinse the chicken breasts and pat them dry with paper towels. Season with a sprinkle of salt and pepper.
  2. In a mixing bowl, combine the cream of mushroom soup, chicken broth, and ranch seasoning and blend well.
Cooking
  1. Place the chicken breasts in the bottom of the crockpot and pour the creamy mixture over them.
  2. Add the sliced mushrooms on top.
  3. Cover and set the crockpot to low for 6-8 hours or high for 3-4 hours.
Serving
  1. When cooking time is up, shred the chicken in the pot using two forks and mix everything well.
  2. Serve over rice, mashed potatoes, or egg noodles, and garnish with fresh herbs if desired.

Notes

Adjust seasoning to taste. This dish can be even better the next day as leftovers. Can substitute ranch seasoning with garlic powder, onion powder, and Italian herbs if needed.
