Ingredients

For the Zucchini Fries
  • 2-3 medium medium zucchinis Choose firm zucchinis with shiny skin
  • 1 cup breadcrumbs Panko works splendidly
  • ½ cup grated Parmesan cheese For that cheesy goodness
  • 1 teaspoon garlic powder For flavor
  • 1 teaspoon onion powder For flavor
  • Salt and pepper To taste
  • 2 large eggs, beaten To help the coating stick
For Baking
  • Cooking spray or olive oil To achieve a crispy texture

Method

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash the zucchinis thoroughly and slice them into fry-like shapes about ¼-inch thick.
Dredging Station
  1. Set up a setup: one bowl with beaten eggs and another bowl with breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper.
Coating
  1. Dip each zucchini strip into the egg wash, let it drip, and coat in the breadcrumb mixture.
  2. Place the coated fries on a parchment-lined baking sheet.
Baking
  1. Spritz the fries with cooking spray or drizzle with olive oil.
  2. Bake in the preheated oven for about 20-25 minutes, flipping halfway through.
Serving
  1. Once golden and crispy, let them cool slightly and serve hot with your favorite dipping sauce.

Notes

For best results, ensure the zucchini fries are in a single layer on the baking sheet to avoid steaming. Customize the flavor by adding herbs to the breadcrumb mixture.
