Preparation
- Wash the russet potatoes thoroughly and clean them.
- Preheat your oven to 425°F (220°C).
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool.
- Peel the cooled potatoes and place them in a mixing bowl.
- Add garlic powder, salt, pepper, and Italian seasoning to the potatoes and mash until combined.
- Fold in the grated Parmesan cheese.
- Form the potato mixture into small balls, about 1-2 inches wide.
- In a separate bowl, mix panko breadcrumbs with olive oil.
- Dip each potato ball into breadcrumbs and place them on a parchment-lined baking sheet.
Cooking
- Bake the potato bites in the preheated oven for 20-25 minutes until golden brown and crispy, flipping halfway through.

- Serve warm with your favorite dipping sauce or enjoy them plain.
