  • 1 tablespoon garlic powder You can reduce for a milder garlic flavor.
  • Salt and pepper to taste

Preparation
  1. Wash the russet potatoes thoroughly and clean them.
  2. Preheat your oven to 425°F (220°C).
  3. Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool.
  4. Peel the cooled potatoes and place them in a mixing bowl.
  5. Add garlic powder, salt, pepper, and Italian seasoning to the potatoes and mash until combined.
  6. Fold in the grated Parmesan cheese.
  7. Form the potato mixture into small balls, about 1-2 inches wide.
  8. In a separate bowl, mix panko breadcrumbs with olive oil.
  9. Dip each potato ball into breadcrumbs and place them on a parchment-lined baking sheet.
Cooking
  1. Bake the potato bites in the preheated oven for 20-25 minutes until golden brown and crispy, flipping halfway through.
Serving
  1. Serve warm with your favorite dipping sauce or enjoy them plain.

Notes

You can prepare the potato mixture in advance and store it in the fridge before baking. Experiment with different spices for added flavor.
