  • 14 oz canned artichoke hearts, drained and rinsed
  • 1 cup breadcrumbs (panko works best for ultimate crunch) Panko breadcrumbs recommended for extra crunch.
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 2 large eggs
  • Olive oil spray or a drizzle of olive oil

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Gently pat your artichoke hearts dry with a paper towel.
  3. In one bowl, whisk your eggs until fluffy. In another bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
Dipping and Baking
  1. Dip each artichoke heart in the egg, letting excess drip off, then roll in the breadcrumb mixture.
  2. Place coated artichoke hearts on a baking sheet lined with parchment paper and spray lightly with olive oil.
  3. Bake for about 20-25 minutes, or until crispy and golden.
