For the Tangy Slaw
  • 2 cups Cabbage Shredded

Preparation
  1. Flatten the chicken breasts to ensure even cooking. Season with salt and pepper.
  2. Set up a breading station with flour, whisked eggs, and breadcrumbs.
Cooking
  1. Dredge each chicken breast in flour, dip in the egg, and coat with breadcrumbs.
  2. Heat oil in a skillet over medium heat and fry the chicken for 5-7 minutes on each side until golden brown.
  3. Place a slice of mozzarella on each chicken piece in the last minute of cooking and cover the skillet to melt the cheese.
Assembling the Sandwich
  1. While the chicken is frying, prepare the slaw by mixing the shredded cabbage and carrots with mayonnaise and apple cider vinegar. Season with salt and pepper.
  2. Toast the buns lightly and stack the chicken on top, followed by the tangy slaw. Serve hot.

Notes

Make sure the oil is hot enough before adding chicken for better crispiness. You can also bake the chicken instead of frying at 400°F for 20-25 minutes if short on time. This sandwich pairs well with sweet potato fries or a garden salad.
