Preparation
- Start by seasoning the chicken breasts with salt and pepper.
- Dip each chicken breast in the beaten egg, ensuring it’s fully coated.
Crispy Coating
- Roll the chicken in the breadcrumbs until they are generously covered.
- Heat about 1/4 inch of olive oil in a large skillet over medium heat.
Cooking the Chicken
- Carefully add the chicken to the skillet and cook for about 4-5 minutes on each side or until golden brown.
- In the last minute of cooking, add the mozzarella cheese on top and cover the skillet briefly to melt the cheese.
Making the Slaw
- In a large bowl, mix the shredded cabbage and carrots.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper.
- Pour the dressing over the cabbage and toss to combine.
Assembly
- Toast the sandwich buns if desired.
- Pile on the cheesy chicken followed by a generous heap of tangy slaw.
