For the Chicken Sandwich
  • 2 pieces boneless, skinless chicken breasts Seasoned with salt and pepper
  • 1 cup Italian-style breadcrumbs
  • 1 cup shredded mozzarella cheese For topping
  • 1 piece egg, beaten For coating the chicken
  • Salt and pepper To taste
  • Olive oil For frying
  • 4 pieces sandwich buns Your choice of whole wheat or classic
For the Tangy Slaw
  • 2 cups shredded cabbage Green or purple, mix it up
  • 1 cup shredded carrots
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper To taste

Method
 

Preparation
  1. Start by seasoning the chicken breasts with salt and pepper.
  2. Dip each chicken breast in the beaten egg, ensuring it’s fully coated.
Crispy Coating
  1. Roll the chicken in the breadcrumbs until they are generously covered.
  2. Heat about 1/4 inch of olive oil in a large skillet over medium heat.
Cooking the Chicken
  1. Carefully add the chicken to the skillet and cook for about 4-5 minutes on each side or until golden brown.
  2. In the last minute of cooking, add the mozzarella cheese on top and cover the skillet briefly to melt the cheese.
Making the Slaw
  1. In a large bowl, mix the shredded cabbage and carrots.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper.
  3. Pour the dressing over the cabbage and toss to combine.
Assembly
  1. Toast the sandwich buns if desired.
  2. Pile on the cheesy chicken followed by a generous heap of tangy slaw.

Notes

You can substitute chicken with turkey cutlets or eggplant for a veggie option. Store leftovers in airtight containers in the refrigerator for up to 3 days.
