Method
Cook the Beef Filling
- In a skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned, breaking it apart as it cooks. This should take about 7-10 minutes. Spice it up with chili powder, cumin, salt, and pepper. Mix well and allow it to cool a bit.
Warm the Tortillas
- In a separate skillet, heat the corn tortillas one by one for about 30 seconds on each side until they’re soft.
Fill 'Em Up
- Take a warm tortilla and place a spoonful of the beef mixture and a sprinkle of shredded cheese in the center. Roll it up tightly, securing the filling inside. Repeat until all your tortillas are filled.
Fry to Perfection
- In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the taquitos seam-side down and fry them for about 2-3 minutes on each side until they are golden brown and crispy.
Draining Excess Oil
- After frying, let the taquitos drain on a plate lined with paper towels to absorb any excess oil.
Serve with Flair
- Serve the taquitos with a dollop of sour cream and a side of salsa for dipping. Enjoy your homemade Mexican treat!
Notes
Keep tortillas warm in a kitchen towel while filling them. Ground turkey or beans can be used as substitutes. Don't skip the cheese for the best flavor!
