Ingredients
  

Filling
  • 1 pound ground beef Can substitute with ground turkey, chicken, or black beans.
  • 1 small onion, diced The tears are worth it!
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
Taquito Assembly
  • 8-10 pieces corn tortillas Heat to make pliable.
  • 1 cup shredded cheese Cheddar, Monterey Jack, or your choice.
  • as needed Oil for frying Crispiness is key!

Method
 

Preparation
  1. In a large skillet over medium heat, add the ground beef and diced onion. Cook until browned, about 5-7 minutes. Drain any excess fat.
  2. Add garlic, cumin, chili powder, salt, and pepper to the skillet, stirring until fragrant.
  3. Warm tortillas in a dry skillet for about 30 seconds per side.
Assembly & Cooking
  1. Lay a tortilla flat, add about 2 tablespoons of the beef mixture, and sprinkle with cheese. Roll tightly.
  2. In a deep skillet, pour enough oil to cover the bottom and heat over medium-high. Fry taquitos for about 3-4 minutes on each side until golden brown.
  3. Transfer to a paper towel-lined plate to absorb excess oil.
Serving
  1. Serve taquitos hot with dips like salsa, guacamole, or sour cream.

Notes

For extra crispiness, try baking instead of frying at 425°F until golden brown. Store leftovers in an airtight container for up to 3 days or freeze for later.
