  • 1 tbsp olive oil Drizzle for crispiness.
  • 1 tsp garlic powder

Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 1 tsp sriracha Add more to taste for spiciness.
  • 1 tsp lime juice

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season salmon pieces with salt, pepper, and garlic powder.
  3. Toss seasoned salmon pieces with panko breadcrumbs until fully coated.
Cooking
  1. Arrange coated salmon bites on a baking sheet lined with parchment paper.
  2. Drizzle with olive oil and bake for about 12-15 minutes until golden brown.
  3. While baking, mix mayonnaise, sweet chili sauce, sriracha, and lime juice in a bowl for the sauce.
  4. Let salmon bites cool for a few minutes then serve with bang bang sauce.

Notes

Panko breadcrumbs are crucial for achieving a crispy texture. You can prepare salmon bites ahead of time and refrigerate them before baking. Leftovers can be stored in an airtight container for up to 2 days, and it's best to reheat them in the oven.
