Preparation
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
- Cook the bacon in a skillet over medium heat until crispy, about 8-10 minutes. Transfer to a paper towel to drain, reserving the fat.
- In a large mixing bowl, toss the halved Brussels sprouts with 3 tablespoons of reserved bacon fat, olive oil, salt, and pepper.
Cooking
- Spread the seasoned Brussels sprouts on the prepared baking sheet in a single layer. Bake for 20-25 minutes, or until golden brown and crispy.
- While the sprouts are roasting, mix the Bang Bang sauce by combining mayonnaise, sweet chili sauce, and sriracha in a bowl. Adjust the spice level as necessary.
- Once the Brussels sprouts are done, add the crispy bacon back in and toss to combine.
- Drizzle the Bang Bang sauce over the crispy bacon Brussels sprouts and stir. Serve warm.
Notes
For best results, do not overcrowd the baking sheet. To vary the flavors, consider adding freshly grated parmesan or a squeeze of lemon juice before serving. If the sauce is lumpy, stir it well before use.
