Preparation
- Preheat your oven to 425°F (220°C).
- Slice the avocados in half, remove the pit, and scoop the flesh out gently. Cut the avocado into wedges.
- In one bowl, place the all-purpose flour seasoned with salt and pepper. In a second bowl, beat the eggs. In a third bowl, mix the panko breadcrumbs with garlic powder and paprika.
Breading and Baking
- Dredge each avocado wedge in flour, dip into the beaten egg, and then coat with the panko mixture.
- Arrange the coated avocado fries on a baking sheet lined with parchment paper. Spray lightly with olive oil.
- Bake for 15-20 minutes, flipping halfway through, until crispy and lightly golden.
Serving
- Remove from the oven and cool for a minute. Serve with your favorite dipping sauce.
Notes
Ensure the avocados are just ripe for the best texture. Regular breadcrumbs can substitute for panko, but won't be as crispy. You can fry these if preferred for a different texture.
