Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are well-coated.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
Making the Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth and creamy.
  2. Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the sour cream and vanilla extract until combined.
Baking the Cheesecake
  1. Pour the cheesecake filling over the prepared crust in the springform pan.
  2. Bake for about 50-60 minutes, until the edges are set but the center is still slightly jiggly.
  3. Turn off the oven and crack the door open. Let the cheesecake cool in the oven for about an hour.
Chilling and Caramelizing
  1. Remove the cheesecake from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  2. When ready to serve, sprinkle an even layer of granulated sugar over the surface of the cheesecake.
  3. Using a kitchen torch, caramelize the sugar until golden and bubbly. Alternatively, broil in the oven while keeping a watchful eye.

Notes

Letting your cheesecake cool and chill is crucial for the best results. For a fun twist, consider adding orange or lemon zest to the filling. If you don't have a kitchen torch, broiling works as an alternative.
