  • 4 tablespoons olive oil Plus additional for drizzling
  • 4-6 cloves garlic, minced
  • to taste salt

Method

Preparation

  2. Scrub the potatoes and pat them dry. Place each potato between two wooden chopsticks or skewers to help slice them without going through.
  3. Make thin slices in the potatoes, about 1/8 inch apart, without cutting all the way through.
Cooking
  1. Drizzle olive oil over the potatoes and season with salt, pepper, and minced garlic, rubbing it into the crevices.
  2. Place the potatoes on a baking sheet and bake for about 45 minutes, until golden brown and crispy. Optionally, during the last 10 minutes, sprinkle Parmesan cheese and breadcrumbs on top.
  3. Once out of the oven, drizzle with olive oil and sprinkle with fresh herbs before serving.
Serving
  1. Plate the potatoes and enjoy the amazed reactions from your guests.

Notes

Take your time while slicing the potatoes to create perfect Hasselback grooves. You can customize your toppings with bacon bits or sour cream based on preference.
