Method
Cooking the Gnocchi
- Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually until they float to the surface, approximately 2-3 minutes. Once done, drain and set aside.
Sauté the Aromatics
- In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.
Add the Herbs and Beans
- Add fresh thyme and rosemary, stirring well, followed by the white beans. Stir until the beans are evenly coated in the garlic mixture.
Pour in the Broth
- Gently pour in the vegetable broth and bring to a light simmer. Mash about half of the beans in the pan with a fork to create a creamy base while leaving others whole for texture.
Combine the Gnocchi
- Toss the cooked gnocchi into the skillet, stirring gently to coat with the sauce. Season with salt, pepper, and red pepper flakes, allowing it to heat through for a couple more minutes.
Serving
- Dish it out and sprinkle some grated Parmesan on top. Enjoy this comforting bowl of gnocchi!
Notes
Don’t stress over appearance—lumpy sauce adds to the charm. Leftover gnocchi can be stored in the fridge for 3-4 days; add some broth when reheating.
