  • 6 slices bacon, diced Because who doesn’t love bacon?
  • 1 medium onion, chopped Tears from chopping are optional
  • 3 cloves garlic, minced For that aromatic kick
  • 4 cups vegetable or chicken broth
  • 3 cups canned white beans, drained and rinsed Great source of protein!
  • 4 cups fresh spinach A superfood that makes us feel virtuous
  • 1 cup heavy cream Because life is too short for low-fat!
  • Salt and pepper to taste
  • Optional: A sprinkle of red pepper flakes for heat

Method
 

Cooking Steps
  1. In a large pot, cook the diced bacon over medium heat until crispy.
  2. Add the chopped onion to the pot with the bacon and cook until it begins to soften, about 5 minutes.
  3. Stir in the minced garlic and let it cook for another minute.
  4. Pour in the broth, then add the white beans. Stir everything together and let it simmer for about 10 minutes.
  5. Reduce the heat to low and slowly stir in the heavy cream.
  6. Toss in the fresh spinach and cook for another 3-5 minutes until wilted.
  7. Season with salt and pepper, and add red pepper flakes for extra kick.
  8. Ladle the soup into bowls and optionally add extra bacon on top.

Notes

For a lighter option, use turkey bacon. Blend part or all of the soup for a smoother consistency. Kale or frozen veggies can be substituted for spinach.
