Cooking Steps
- In a large pot, cook the diced bacon over medium heat until crispy.
- Add the chopped onion to the pot with the bacon and cook until it begins to soften, about 5 minutes.
- Stir in the minced garlic and let it cook for another minute.
- Pour in the broth, then add the white beans. Stir everything together and let it simmer for about 10 minutes.
- Reduce the heat to low and slowly stir in the heavy cream.
- Toss in the fresh spinach and cook for another 3-5 minutes until wilted.
- Season with salt and pepper, and add red pepper flakes for extra kick.
- Ladle the soup into bowls and optionally add extra bacon on top.
Notes
For a lighter option, use turkey bacon. Blend part or all of the soup for a smoother consistency. Kale or frozen veggies can be substituted for spinach.
