Pasta
  • 8 oz fettuccine pasta or any pasta you have on hand
Chicken
  • 2 pieces boneless, skinless chicken breasts, diced
Sauce Ingredients
  • 1 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced because who doesn’t love garlic?
  • 1 cup heavy cream or for a lighter option, use half-and-half
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish optional but totally fancy!

Method
 

Cooking the Pasta
  1. Begin by boiling your pasta according to package instructions. Remember to salt your water—this is key to flavorful pasta.
  2. Once it’s al dente, drain and set aside.
Sautéing the Chicken
  1. In a large skillet over medium heat, add olive oil.
  2. Toss in the diced chicken, seasoning with salt and pepper. Cook until golden and cooked through, about 5-7 minutes.
Adding Garlic and Tomatoes
  1. Once your chicken is perfect, stir in the minced garlic and sun-dried tomatoes.
  2. Let them hang out for about a minute until the garlic is fragrant.
Creating the Creamy Sauce
  1. Reduce your heat to low and pour in the heavy cream.
  2. Stir in the Parmesan cheese until it’s melted and smooth.
Combining the Dish
  1. Add the cooked pasta to the skillet, tossing everything together until the pasta is well-coated in that creamy sauce.

Notes

If your pasta seems to be sticking together, a drizzle of olive oil should do the trick! You can substitute heavy cream with a lower-fat option or even Greek yogurt for creaminess. This pasta keeps well in the fridge and tastes even better the next day!
