Searing the Chicken
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken for about 5-7 minutes on each side until golden brown and cooked through.
Creating the Creamy Sauce
- Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for about a minute until fragrant.
- Pour in the heavy cream and stir to combine.
- Add grated Parmesan cheese and stir until melted.
- Return the chicken to the skillet and simmer for a few minutes.
- Add the fresh basil just before serving.
Serving
- Plate the dish as is or over cooked pasta or rice.
Notes
Don’t worry if your sauce looks a little lumpy; simply stir until smooth. For an indulgent twist, consider adding a splash of white wine to the sauce. Use rotisserie chicken for a faster option.
