Ingredients
  

For the Quiche
  • 1 pie crust 1 pie crust (store-bought or homemade) No judgment here!
  • 2 cups 2 cups fresh spinach, chopped Frozen spinach works too; just make sure it’s thawed and drained.
  • 1 cup 1 cup crumbled feta cheese
  • 4 large 4 large eggs
  • 1 cup 1 cup heavy cream Half-and-half is a lovely substitute if you want to lighten it up.
  • Salt and pepper to taste
  • 1/4 teaspoon 1/4 teaspoon nutmeg Adds a lovely depth of flavor.
  • 1/2 cup 1/2 cup diced onion Optional, but highly recommended.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. If using a store-bought crust, roll it out and place it in a pie dish, crimping the edges. If making a crust, use a homemade recipe for a truly homemade touch.
  3. In a skillet over medium heat, add a splash of olive oil (or butter) and sauté the diced onions until they’re translucent and fragrant, about 5-7 minutes.
Filling
  1. In a large bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg.
  2. Add in the chopped spinach, sautéed onions, and crumbled feta cheese, stirring until well combined.
Baking
  1. Pour the mixture into the prepared pie crust and shake gently to distribute the filling evenly.
  2. Bake in the preheated oven for about 35-40 minutes, or until the quiche is set and golden on top.
Serving
  1. Allow the quiche to cool for about 10 minutes before slicing.

Notes

Don’t stress about imperfections! If your crust cracks a little, it adds character. This quiche is versatile; feel free to add cooked bacon or other veggies like bell peppers or mushrooms. Serving suggestion: Top slices with a dollop of sour cream or a sprinkle of parsley.
