Ingredients
  

Pasta and Sauce Ingredients
  • 8 ounces linguine or spaghetti Use your preferred pasta.
  • ¾ cup pesto Store-bought or homemade.
  • 1 cup heavy cream For a creamy sauce.
  • 4 ounces goat cheese Crumble for melting into the sauce.
  • 1 cup cherry tomatoes Halved for added flavor and color.
  • to taste salt and pepper Adjust according to preference.
  • fresh basil Optional for garnish.

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil.
  2. Add the linguine or spaghetti and cook according to package instructions until al dente.
Preparing the Sauce
  1. While the pasta is cooking, combine the heavy cream and pesto in a large skillet over medium heat.
  2. Stir until the mixture is warmed through, but not boiling.
Incorporating Goat Cheese
  1. Crumble the goat cheese into the skillet and stir until melted into the sauce.
Adding Tomatoes
  1. Add the halved cherry tomatoes to the sauce and allow them to warm through.
Combining Pasta with Sauce
  1. Drain the pasta, reserving some pasta water, then add it to the sauce.
  2. Toss to coat the pasta evenly, adding reserved pasta water if necessary for consistency.
Final Seasoning and Serving
  1. Adjust seasoning with salt and pepper as desired.
  2. Plate and garnish with fresh basil, if using.

Notes

This dish can be customized with additional veggies or a splash of white wine. Leftovers keep well in the fridge for up to 3 days. Enjoy!
