  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup orzo pasta
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup fresh spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Grated Parmesan cheese, for serving

Method
 

Preparation
  1. In a large skillet, heat a drizzle of olive oil over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Sauté until golden brown (about 5-7 minutes).
  2. Add the diced onion to the skillet, cooking until it's translucent (roughly 3 minutes). Toss in the minced garlic and let it bloom for about 30 seconds.
Cooking
  1. Pour in the orzo pasta and stir it around for about a minute.
  2. Pour in the chicken broth and bring everything to a boil. Reduce the heat and let it simmer, stirring occasionally, for about 8-10 minutes or until the orzo is tender.
  3. Stir in the heavy cream, Italian seasoning, and chopped spinach. Allow it to simmer for another 2-3 minutes until everything is beautifully combined and creamy.
  4. Plate your creamy orzo chicken and top it off with a generous sprinkle of grated Parmesan cheese.

Notes

If the sauce looks lumpy, just give it a good stir. Feel free to add extra veggies like bell peppers or cherry tomatoes.
