  • 1 cup pastina (tiny pasta)
  • 8 ounces mushrooms (sliced, your choice of variety)
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)

Method
 

Sauté the mushrooms
  1. In a large pan, heat the olive oil over medium heat. Add the sliced mushrooms and sauté them until they’re golden brown and tender, about 5-7 minutes. Season with a pinch of salt and pepper.
Add the garlic
  1. Toss in the minced garlic and sauté for another minute until fragrant.
Cook the pastina
  1. Stir in the vegetable or chicken broth and bring to a boil. Once boiling, add the pastina and cook according to package instructions, typically around 5-7 minutes.
Make it creamy
  1. Once the pastina is cooked, reduce the heat and stir in the heavy cream. Let simmer for a few minutes until it thickens to your desired creaminess.
Garnish and serve
  1. Remove from heat and sprinkle with fresh parsley before serving.

Notes

Customize your Creamy Mushroom Pastina by adding spinach or parmesan cheese. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat by adding a splash of broth or cream.
