  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream Can substitute with Greek yogurt or coconut milk for a lighter option.
  • 1/2 cup chicken broth
  • 1/4 cup freshly squeezed lemon juice
  • 1 piece Zest of 1 lemon
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped

Method
 

Preparation
  1. Start by seasoning your chicken breasts with salt and pepper.
Cooking the Chicken
  1. In a large skillet, heat the olive oil over medium heat.
  2. Once hot, add the chicken and cook for about 7-8 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and let it rest on a plate.
Making the Sauce
  1. In the same skillet, add the minced garlic and sauté for about 1 minute, or until fragrant.
  2. Pour in the chicken broth, heavy cream, lemon juice, and lemon zest. Stir together and bring to a simmer.
  3. Let it cook for about 5 minutes, allowing the sauce to thicken slightly.
Combining
  1. Add the chicken back into the skillet, coating it with the sauce. Let everything simmer together for another 2-3 minutes.
Serving
  1. Sprinkle with fresh parsley for garnish. Serve with your favorite side.

Notes

If using shrimp or tofu, adjust cooking times as necessary. Store leftovers in an airtight container in the fridge for up to three days.
