Ingredients

Main Ingredients
  • 2 cans butter beans, drained and rinsed 15 oz each
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter adds richness
  • 4 cloves garlic, minced for flavor
  • 1 small lemon, zested and juiced adds brightness
  • 2 tablespoons capers, rinsed brings a savory kick
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped for garnish

Method

Cooking Steps
  1. In a large skillet, heat the olive oil and butter over medium heat until the butter is melted.
  2. Add in the minced garlic and sauté for about 1-2 minutes until fragrant.
  3. Toss in the drained butter beans, lemon juice, and zest. Stir gently to coat everything. Season with salt and pepper to your liking.
  4. Add the capers into the mix and stir for another 2-3 minutes until the beans are heated through.
  5. Remove from heat and sprinkle with fresh parsley before serving.

Notes

If the sauce looks a bit clumpy, that’s just how butter and bean magic works! Feel free to adjust the lemon juice according to your taste for more zing.
