  • 4 pieces leeks, cleaned and sliced (white and light green parts) Make sure to clean properly as they can be sandy.
  • 1 can (15 oz) white beans, drained and rinsed (cannellini or great northern beans work great)
  • 1 cup heavy cream (or your favorite dairy substitute) For a lighter version, use half-and-half.
  • ½ cup crumbled blue cheese, plus more for serving Can substitute with feta or goat cheese.
  • ½ cup walnuts, roughly chopped Toasted for better flavor.
  • 4 strips bacon, cooked until crispy and crumbled
  • 2 tablespoons olive oil
  • to taste salt and pepper Adjust according to preference.
  • optional fresh parsley, chopped (for garnish)

Cooking Steps
  1. In a large skillet over medium heat, warm up the olive oil.
  2. Add the sliced leeks and sauté them for about 5-7 minutes until they start to soften.
  3. Combine the drained white beans with the leeks and season with salt and pepper.
  4. Slowly pour in the heavy cream and bring the skillet to a gentle simmer.
  5. Mix in the crumbled blue cheese until it melts and blends into the mixture.
  6. Add the crumbled bacon and toasted walnuts, and stir to combine.
  7. Serve hot, garnished with extra blue cheese and chopped parsley.

Remember to clean leeks thoroughly before using. This dish can be customized with different beans or even topped with a poached egg for extra flavor.
