Ingredients
  

Protein & Vegetables
  • 1 lb Ground sausage or beef Base flavor and protein source. Can substitute with ground turkey or vegetarian sausage.
  • 1 cup Chopped onions Adds depth and aroma to the soup. Can substitute with shallots or onion powder.
  • 3 cloves Garlic, minced Enhances flavor.
Liquid Ingredients
  • 3 tbsp Tomato paste Enhances the tomato flavor. Can substitute with crushed tomatoes or marinara sauce.
  • 4 cups Chicken or beef broth Provides the liquid base. Can substitute with vegetable broth or water with seasoning.
Pasta
  • 8 oz Lasagna noodles or short pasta Adds heartiness to the soup. Can substitute with any short pasta like penne or fusilli.
Cream & Cheese
  • 1 cup Heavy cream Adds richness and creaminess. Can substitute with half-and-half or coconut cream.
  • 1 cup Mozzarella cheese, shredded Provides the classic cheesy flavor. Can substitute with cheddar or a vegan cheese alternative.
  • 1/2 cup Parmesan cheese, grated Adds additional cheesy flavor.
Seasonings
  • 1 tbsp Italian seasoning Enhances overall flavor profile. Can substitute with oregano, basil, or herbes de Provence.
  • to taste Salt and pepper For seasoning.

Method
 

Cooking the Soup
  1. In a large pot, cook the ground sausage or beef over medium heat until browned.
  2. Add chopped onions and garlic, cooking until the onions are translucent.
  3. Stir in the tomato paste and Italian seasoning; cook for a few minutes until well combined.
  4. Pour in the chicken or beef broth and bring to a boil.
  5. Add the broken lasagna noodles or short pasta and cook until tender, stirring occasionally.
  6. Once the pasta is cooked, reduce heat and stir in the heavy cream and mozzarella cheese until melted.
  7. Season with salt and pepper to taste, then ladle into bowls and serve warm.

Notes

Feel free to add spinach or mushrooms for extra nutrition. For a non-creamy version, simply skip the cream.
