Cooking the Soup
- In a large pot, cook the ground sausage or beef over medium heat until browned.
- Add chopped onions and garlic, cooking until the onions are translucent.
- Stir in the tomato paste and Italian seasoning; cook for a few minutes until well combined.
- Pour in the chicken or beef broth and bring to a boil.
- Add the broken lasagna noodles or short pasta and cook until tender, stirring occasionally.
- Once the pasta is cooked, reduce heat and stir in the heavy cream and mozzarella cheese until melted.
- Season with salt and pepper to taste, then ladle into bowls and serve warm.
Notes
Feel free to add spinach or mushrooms for extra nutrition. For a non-creamy version, simply skip the cream.
