Ingredients
  

For the Quiche
  • 1 pie crust 1 pre-made pie crust Can be homemade or store-bought
  • 6 large eggs 6 large eggs
  • 1 cup 1 cup heavy cream For a luscious texture
  • 1 cup 1 cup shredded cheese A mix of sharp cheddar and Gruyère recommended
  • 1 cup 1 cup diced cooked ham Leftover ham works great
  • 1/4 cup 1/4 cup chopped onions Shallots can be used for a fancier option
  • 1 teaspoon 1 teaspoon dried thyme
  • 1/2 teaspoon 1/2 teaspoon nutmeg
  • Salt and pepper To taste
For the Hollandaise Sauce
  • 3 large egg yolks 3 large egg yolks
  • 1 tablespoon 1 tablespoon lemon juice
  • 1/2 cup 1/2 cup unsalted butter, melted
  • Salt and cayenne pepper To taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and place your pie crust in a 9-inch pie dish. Prick the bottom with a fork to prevent bubbling.
  2. In a mixing bowl, whisk together the eggs and heavy cream until smooth. Add the thyme, nutmeg, and a pinch of salt and pepper.
  3. Fold in the ham, cheese, and onions to the egg mixture.
  4. Pour the egg mixture into the prepared pie crust. Make sure it settles evenly.
  5. Bake in your preheated oven for about 35-40 minutes, or until the top is golden and set. A toothpick inserted into the center should come out clean.
Making the Hollandaise Sauce
  1. While the quiche is cooling, whisk together the egg yolks and lemon juice in a small bowl until pale.
  2. Slowly drizzle in the melted butter while continuing to whisk vigorously until the sauce thickens. Add a pinch of salt and cayenne pepper.
Serving
  1. Slice your quiche into wedges, drizzle with hollandaise, and serve.

Notes

For a meat-free version, swap the ham for cooked bacon or veggies. Spinach and feta make a delightful combo. If your hollandaise is too thick, whisk in a teaspoon of warm water.
