Ingredients
  

For the Quiche
  • 1 pie crust 1 pre-made pie crust (store-bought) Store-bought works perfectly.
  • 6 large 6 large eggs
  • 1 cup 1 cup heavy cream
  • 1 cup 1 cup cooked ham, diced
  • 1 cup 1 cup shredded cheese (cheddar, Swiss, or your favorite blend) Choose your favorite cheese blend.
  • 1/2 teaspoon 1/2 teaspoon salt
  • 1/4 teaspoon 1/4 teaspoon pepper
  • 1/4 teaspoon 1/4 teaspoon garlic powder
  • 1/4 teaspoon 1/4 teaspoon onion powder
For the Homemade Hollandaise
  • 3 large 3 large egg yolks
  • 1 tablespoon 1 tablespoon lemon juice
  • 1/2 cup 1/2 cup unsalted butter, melted
  • Salt to taste
  • A pinch of cayenne pepper (optional, for a little kick)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Roll out your pie crust into a 9-inch pie plate, pressing it firmly into the dish. Poke a few holes in the bottom to prevent bubbling.
  3. In a large bowl, combine the eggs, heavy cream, salt, pepper, garlic powder, and onion powder. Whisk until well combined.
  4. Stir in the diced ham and shredded cheese.
Baking
  1. Pour the egg mixture into the prepared crust. Bake for about 30-35 minutes, until the top is set and lightly browned.
Hollandaise Sauce
  1. While the quiche is baking, whisk the egg yolks and lemon juice in a heatproof bowl until pale and thick.
  2. Place the bowl over a saucepan of simmering water. Gradually whisk in the melted butter until the sauce is smooth. Season with salt and a pinch of cayenne if desired.
Serving
  1. Once the quiche is out of the oven and slightly cooled, slice it, drizzle with hollandaise, and serve.

Notes

For a lighter version, skip the crust and pour the filling into a greased pie plate. Feel free to substitute the ham for cooked bacon or sautéed vegetables. Reheat in the oven at 350°F (175°C) if made ahead of time.
