Preparation
- Preheat your oven to 375°F (190°C).
- Roll out your pie crust into a 9-inch pie plate, pressing it firmly into the dish. Poke a few holes in the bottom to prevent bubbling.
- In a large bowl, combine the eggs, heavy cream, salt, pepper, garlic powder, and onion powder. Whisk until well combined.
- Stir in the diced ham and shredded cheese.
Baking
- Pour the egg mixture into the prepared crust. Bake for about 30-35 minutes, until the top is set and lightly browned.
Hollandaise Sauce
- While the quiche is baking, whisk the egg yolks and lemon juice in a heatproof bowl until pale and thick.
- Place the bowl over a saucepan of simmering water. Gradually whisk in the melted butter until the sauce is smooth. Season with salt and a pinch of cayenne if desired.
Serving
- Once the quiche is out of the oven and slightly cooled, slice it, drizzle with hollandaise, and serve.
Notes
For a lighter version, skip the crust and pour the filling into a greased pie plate. Feel free to substitute the ham for cooked bacon or sautéed vegetables. Reheat in the oven at 350°F (175°C) if made ahead of time.
