Creamy Garlic Shrimp Pasta

Ingredients
  

Pasta
  • 8 oz spaghetti or fettuccine Your choice, fettuccine preferred.
Shrimp
  • 1 lb large shrimp, peeled and deveined
Sauce
  • 3 tbsp olive oil
  • 1 tbsp butter
  • 4 cloves garlic, minced Garlic is essential!
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese And maybe a sprinkle more for good measure.
  • to taste Salt and pepper
  • 1 tsp red pepper flakes Optional for some heat.
Garnish
  • to taste Fresh parsley, chopped For garnish.

Method
 

Cooking Pasta
  1. In a large pot, bring salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve a cup of the pasta water.
Sauté Shrimp
  1. In a large skillet over medium heat, add olive oil and butter. Once melted, add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove from skillet and set aside.
Make Garlic Sauce
  1. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted. If too thick, add reserved pasta water.
Combine Ingredients
  1. Add the cooked pasta and sautéed shrimp back into the skillet. Toss to combine. Taste and adjust seasoning.
Serve
  1. Plate the pasta, garnish with chopped parsley and additional Parmesan if desired. Enjoy!

Notes

If pasta sticks together, toss with olive oil right after draining. You can prep ingredients in advance. Shrimp can be substituted with chicken or vegetables.
