Method
Cooking the Pasta
- Start by boiling a large pot of salted water. Add the linguine and cook according to package instructions until al dente. Drain and set aside, but don’t forget to save a cup of that pasta water.
Sautéing the Garlic
- In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about a minute until fragrant.
Cooking the Seafood
- Add the shrimp and mussels to the skillet. Cook for about 3-5 minutes or until the shrimp turn pink and the mussels open up.
Making the Sauce
- Pour in the heavy cream and stir in the Parmesan cheese. Let it simmer on low for a few minutes until it thickens. If it looks too thick, add a splash of that reserved pasta water.
Combining and Serving
- Add the cooked linguine to the skillet, tossing until the pasta is well coated. Stir in the parsley, lemon zest, and lemon juice. Season with salt and pepper.
- Dish out generous portions and garnish with extra parsley and Parmesan. Enjoy!
Notes
For an extra pop of flavor, toss in a pinch of red pepper flakes! Feel free to switch mussels out for clams or scallops if you prefer.
