Creamy Garlic Seafood Pasta

A luxurious yet easy recipe that combines linguine pasta with shrimp and mussels in a rich garlic cream sauce, perfect for impressing guests or a cozy family dinner.

Ingredients
  

For the Pasta
  • 8 oz linguine pasta or any pasta you fancy
  • 2 tbsp olive oil
  • 3 cloves garlic, minced because we don’t do bland!
For the Seafood
  • 1 lb shrimp, peeled and deveined
  • 1 lb mussels, cleaned and debearded now it’s feeling fancy!
For the Sauce
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • to taste Salt and pepper

Method
 

Cooking the Pasta
  1. Start by boiling a large pot of salted water. Add the linguine and cook according to package instructions until al dente. Drain and set aside, but don’t forget to save a cup of that pasta water.
Sautéing the Garlic
  1. In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about a minute until fragrant.
Cooking the Seafood
  1. Add the shrimp and mussels to the skillet. Cook for about 3-5 minutes or until the shrimp turn pink and the mussels open up.
Making the Sauce
  1. Pour in the heavy cream and stir in the Parmesan cheese. Let it simmer on low for a few minutes until it thickens. If it looks too thick, add a splash of that reserved pasta water.
Combining and Serving
  1. Add the cooked linguine to the skillet, tossing until the pasta is well coated. Stir in the parsley, lemon zest, and lemon juice. Season with salt and pepper.
  2. Dish out generous portions and garnish with extra parsley and Parmesan. Enjoy!

Notes

For an extra pop of flavor, toss in a pinch of red pepper flakes! Feel free to switch mussels out for clams or scallops if you prefer.
