  • 1 pound cooked lobster meat, chopped Feel free to grab some frozen or pre-packaged to make this even easier!
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced Because garlic makes everything better.
  • 1/2 cup heavy cream
  • 1/2 cup cream cheese, softened
  • 1 teaspoon lemon juice A splash of brightness!
  • 1/2 teaspoon paprika For that touch of color and flavor.
  • Salt and pepper to taste
  • 1/4 cup chopped green onions or chives For garnish; if you’re feeling fancy.

Method
 

Preparation
  1. In a large skillet over medium heat, melt the butter.
  2. Add the minced garlic to the melted butter and sauté for about 1 minute until fragrant.
  3. Pour in the heavy cream and cream cheese, stirring until everything is well combined and creamy.
  4. Mix in your chopped lobster meat, lemon juice, paprika, salt, and pepper. Stir until the lobster has mixed into the creamy mixture. Let simmer for about 5 minutes.
  5. Spoon the creamy lobster mixture over crispy toast or in phyllo cups and top with chopped green onions or chives.

Notes

If you’re not a lobster fan, use shrimp or crabmeat instead. If the mixture is too thick, add a splash more cream. Store leftovers in an airtight container in the fridge for up to 2 days.
