Creamy French Onion Gnocchi Bake

Ingredients
  

For the onion mixture
  • 1 tablespoon olive oil
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme fresh or dried works
  • to taste Salt and pepper
  • 1 cup vegetable broth or chicken, if you prefer
  • 1 cup heavy cream
For the bake
  • 1 pound gnocchi store-bought or homemade
  • 1 cup Gruyère cheese, shredded
  • ½ cup Parmesan cheese, grated
  • to taste Fresh parsley, for garnish optional but encouraged

Method
 

Preparation
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onions and cook, stirring occasionally, until caramelized (about 20 minutes).
  3. In the last few minutes of cooking, add the garlic, thyme, salt, and pepper.
Cooking
  1. Add the vegetable broth to the caramelized onions, and let it simmer for about 5 minutes.
  2. Stir in the heavy cream until well combined.
  3. Add the gnocchi to the creamy onion mixture and stir until the gnocchi are fully coated.
Baking
  1. Preheat your oven to 375°F (190°C) and pour the mixture into a greased baking dish.
  2. Sprinkle the Gruyère cheese and half of the Parmesan on top, then sprinkle the remaining Parmesan.
  3. Bake for about 20-25 minutes or until the cheese is bubbling and golden brown.

Notes

Gruyère can be substituted with mozzarella and cheddar for a twist. Prepare in advance and bake just before serving. Store leftovers in an airtight container for up to three days.
