Preparation
- Heat the olive oil in a large skillet over medium heat.
- Add the onions and cook, stirring occasionally, until caramelized (about 20 minutes).
- In the last few minutes of cooking, add the garlic, thyme, salt, and pepper.
Cooking
- Add the vegetable broth to the caramelized onions, and let it simmer for about 5 minutes.
- Stir in the heavy cream until well combined.
- Add the gnocchi to the creamy onion mixture and stir until the gnocchi are fully coated.
Baking
- Preheat your oven to 375°F (190°C) and pour the mixture into a greased baking dish.
- Sprinkle the Gruyère cheese and half of the Parmesan on top, then sprinkle the remaining Parmesan.
- Bake for about 20-25 minutes or until the cheese is bubbling and golden brown.
Notes
Gruyère can be substituted with mozzarella and cheddar for a twist. Prepare in advance and bake just before serving. Store leftovers in an airtight container for up to three days.
