For the Beef Tips
  • 2 lbs beef stew meat (chuck or round) Cut into bite-sized chunks.
  • 1 cup sliced mushrooms (white or cremini)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce Adds depth of flavor.
  • Salt and pepper To taste.
For the Creamy Sauce
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 teaspoon Italian seasoning
  • 1 cup sour cream or Greek yogurt
  • 2 tablespoons flour Optional, for thickening.

Preparation
  1. Place beef stew meat in the crockpot. Add sliced mushrooms, diced onion, and minced garlic. Stir to combine.
  2. Pour in the beef broth and Worcestershire sauce. Season with salt and pepper.
  3. Sprinkle in Italian seasoning. Set crockpot on low for 7-8 hours or high for 3-4 hours.
Adding Creamy Sauce
  1. In a small bowl, mix cream of mushroom soup with sour cream (or Greek yogurt) and whisk in flour if desired.
  2. About 30 minutes before serving, stir the creamy mixture into the beef mixture. Let flavors meld.

Notes

Feel free to substitute veggies as needed; carrots or green beans work well. If the sauce appears lumpy, mix it thoroughly to create a smooth texture.
