Method
Cooking the Pasta
- Boil a large pot of salted water and cook fettuccine according to package directions until al dente. Reserve about a cup of pasta water, then drain and set aside.
Seasoning the Shrimp
- In a medium bowl, toss shrimp with Cajun seasoning, garlic, salt, and pepper.
Sautéing the Shrimp
- Heat olive oil in a large skillet over medium-high heat. Add seasoned shrimp and cook for 2-3 minutes on each side or until pink and opaque.
Creating the Alfredo Sauce
- Remove shrimp and set aside. In the same skillet, pour in heavy cream and scrap up bits from the bottom. Bring to a simmer and let thicken before stirring in parmesan cheese. Adjust consistency with reserved pasta water if needed.
Combining Everything
- Return shrimp to the pan, add drained fettuccine, and gently toss to coat in the sauce.
Serving
- Garnish with parsley and sprinkle extra parmesan before serving.
Notes
If you prefer an extra kick, add a dash of hot sauce to the sauce mixture. This dish pairs well with side salad or crusty garlic bread.
