Creamy Cajun Shrimp Alfredo Pasta

Ingredients
  

Pasta and Meat
  • 8 ounces fettuccine pasta
  • 1 pound shrimp, peeled and deveined
Seasoning and Sauces
  • 1 tablespoon Cajun seasoning Adjust based on your love for heat.
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated Plus extra for topping.
  • Salt and black pepper to taste
Garnish
  • Fresh parsley, chopped For garnish.

Method
 

Cooking the Pasta
  1. Boil a large pot of salted water and cook fettuccine according to package directions until al dente. Reserve about a cup of pasta water, then drain and set aside.
Seasoning the Shrimp
  1. In a medium bowl, toss shrimp with Cajun seasoning, garlic, salt, and pepper.
Sautéing the Shrimp
  1. Heat olive oil in a large skillet over medium-high heat. Add seasoned shrimp and cook for 2-3 minutes on each side or until pink and opaque.
Creating the Alfredo Sauce
  1. Remove shrimp and set aside. In the same skillet, pour in heavy cream and scrap up bits from the bottom. Bring to a simmer and let thicken before stirring in parmesan cheese. Adjust consistency with reserved pasta water if needed.
Combining Everything
  1. Return shrimp to the pan, add drained fettuccine, and gently toss to coat in the sauce.
Serving
  1. Garnish with parsley and sprinkle extra parmesan before serving.

Notes

If you prefer an extra kick, add a dash of hot sauce to the sauce mixture. This dish pairs well with side salad or crusty garlic bread.
