Preparation
- Season the chicken breasts with salt and pepper. Optionally, sprinkle on garlic powder for extra flavor.
Crisping Prosciutto
- In a skillet over medium heat, cook the prosciutto slices until crispy, about 3-5 minutes. Remove and place on a paper towel.
Cooking Chicken
- In the same skillet, add the seasoned chicken breasts to the prosciutto drippings and sear them for about 7-8 minutes on each side, until golden-brown.
Making the Creamy Sauce
- Remove the chicken from the skillet. Pour in the apple cider, scraping the bottom for flavor. Let it reduce for about 3 minutes.
- Stir in the heavy cream, thyme, and shredded Gruyère. Simmer until the cheese melts and the sauce becomes creamy.
Combining and Serving
- Return the chicken to the skillet, and spoon the creamy sauce over it, letting it soak in for a couple more minutes.
- Crumble the crispy prosciutto on top and garnish with fresh parsley.
Notes
For less creaminess, Greek yogurt can be a lighter option, but will change the texture and flavor. For extra crunch, add prosciutto at serving.
