Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked pasta, mixed vegetables, cream of mushroom soup, shredded chicken, and half of the cheddar cheese. Stir until well combined.
- Sprinkle with salt and pepper to taste.
- Pour the mixture into a greased baking dish and spread it evenly.
- Sprinkle the remaining cheddar cheese on top. Optionally, add some crushed crackers or breadcrumbs.
Baking
- Bake for 25-30 minutes, or until bubbly and golden brown.
- Let it cool for a few minutes before serving.

Notes
For added vegetables, consider tossing in fresh spinach or zucchini. Use leftover chicken or turkey for a great use of leftovers. To make it vegetarian, swap the chicken for chickpeas or omit it.
