  • 2 cups cooked pasta (rotini) Works like a charm
  • 1 can (15 oz) mixed vegetables Drained, sneaky way to get your greens
  • 1 can (10.5 oz) cream of mushroom soup Makes everything creamy and dreamy
  • 1 cup cooked chicken, shredded Protein is important
  • 1 cup shredded cheddar cheese Makes everything better
  • Salt and pepper to taste No bland casseroles allowed!
  • Optional toppings: crushed crackers or breadcrumbs For that irresistible crunch

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked pasta, mixed vegetables, cream of mushroom soup, shredded chicken, and half of the cheddar cheese. Stir until well combined.
  3. Sprinkle with salt and pepper to taste.
  4. Pour the mixture into a greased baking dish and spread it evenly.
  5. Sprinkle the remaining cheddar cheese on top. Optionally, add some crushed crackers or breadcrumbs.
Baking
  1. Bake for 25-30 minutes, or until bubbly and golden brown.
  2. Let it cool for a few minutes before serving.
  3. Enjoy and watch the smiles around the table!

Notes

For added vegetables, consider tossing in fresh spinach or zucchini. Use leftover chicken or turkey for a great use of leftovers. To make it vegetarian, swap the chicken for chickpeas or omit it.
