Ingredients

Main Ingredients
  • 1 cup white chocolate chips Feel free to indulge — you deserve it!
  • ½ cup heavy cream
  • ½ cup dried cranberries These add a pop of tartness!
  • ¾ cup shelled pistachios, finely chopped Because green is the new black
  • 1 tsp vanilla extract
  • 1 pinch salt To balance the sweetness
For Rolling
  • Extra chopped pistachios and cranberries Get ready for a little fun with rolling!

Method

Melt the Chocolate
  1. In a saucepan over medium heat, combine the white chocolate chips and heavy cream. Stir gently until melted and smooth.
Mix It Up
  1. Remove the pan from the heat and stir in the diced cranberries, vanilla extract, and a pinch of salt. Let this dreamy mixture cool for about 30 minutes.
Shape Those Truffles
  1. Once cooled and set, use a cookie scoop or your hands (with a dusting of powdered sugar to avoid stickiness) to form small balls, each around 1 inch in diameter.
Roll and Chill
  1. Roll the truffles in the chopped pistachios and cranberries, making sure they are well-coated. Place them on a baking sheet lined with parchment paper and chill in the fridge for about an hour to firm up.
Taste Test
  1. After an hour, take one (or two, or three) out for a taste test to confirm your genius in the kitchen.

Notes

Chill out if your truffles are too soft to work with while forming balls. You can swap dried cranberries for other dried fruits like apricots or cherries for a different flavor twist. Let kids roll the chilled truffles in the nuts or coconut for some fun!
