Melt the Chocolate
- In a saucepan over medium heat, combine the white chocolate chips and heavy cream. Stir gently until melted and smooth.
Mix It Up
- Remove the pan from the heat and stir in the diced cranberries, vanilla extract, and a pinch of salt. Let this dreamy mixture cool for about 30 minutes.
Shape Those Truffles
- Once cooled and set, use a cookie scoop or your hands (with a dusting of powdered sugar to avoid stickiness) to form small balls, each around 1 inch in diameter.
Roll and Chill
- Roll the truffles in the chopped pistachios and cranberries, making sure they are well-coated. Place them on a baking sheet lined with parchment paper and chill in the fridge for about an hour to firm up.

Notes
