  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs Room temperature.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1 cup shelled pistachios, roughly chopped

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this into the butter mixture until just combined.
  5. Gently stir in the cranberries and pistachios.
  6. Drop rounded tablespoons of dough onto parchment-lined baking sheets.
Baking
  1. Bake for about 10-12 minutes, or until the edges are golden.
  2. Let them cool on the baking sheets for a couple of minutes before transferring them to wire racks.

Notes

Don’t overmix when adding dry ingredients. Store leftovers in an airtight container at room temperature for up to a week.
