Ingredients
  

For the Baked Brie
  • 1 sheet puff pastry (thawed)
  • 1 round brie cheese
  • 1 cup fresh cranberries
  • ½ cup pecans (chopped)
  • cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 each egg (beaten, for egg wash)
  • a pinch salt
For Serving

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Unroll the puff pastry on a lightly floured surface, aiming for about ¼ inch thickness.
Filling
  1. In a mixing bowl, combine the cranberries, chopped pecans, brown sugar, vanilla extract, and a pinch of salt.
Wrapping
  1. Place the brie in the center of the puff pastry and top it with the cranberry-pecan mixture.
  2. Fold the pastry over the brie, sealing it tightly.
Baking
  1. Brush the wrapped brie with the beaten egg and bake for 25-30 minutes or until bubbly and golden brown.
  2. Cool slightly before slicing into the pastry to reveal the melty brie.

Notes

For firmer brie, chill it in the freezer for 15 minutes before wrapping. If the pastry tears, patch it with extra pastry. Substitute cranberries and pecans with your favorite fruits and nuts if desired.
