Preparation
- Preheat your oven to 400°F (200°C).
- Roll out the thawed puff pastry on a floured surface.
- Cut the pastry into squares approximately 3x3 inches.
Assembly
- Place a piece of brie in the center of each square and top with a spoonful of cranberry sauce.
- Fold the corners of the pastry over the filling and pinch to seal.
- Brush the tops of the pastries with the beaten egg.
Baking
- Arrange the bites on a baking sheet lined with parchment paper.
- Bake for about 15-20 minutes until puffed and golden brown.
Serving
- Let cool for a few minutes, then garnish with fresh herbs if desired. Serve warm.
