Ingredients
  

For the Pastry Bites
  • 1 sheet puff pastry, thawed
  • 8 ounces brie cheese, cut into small pieces
  • 1 cup cranberry sauce, homemade or store-bought Mix in some brown sugar for extra sweetness if desired.
  • 1 large egg, beaten For egg wash to give color.
For Garnishing (Optional)
  • to taste chopped fresh rosemary or thyme

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a floured surface.
  3. Cut the pastry into squares approximately 3x3 inches.
Assembly
  1. Place a piece of brie in the center of each square and top with a spoonful of cranberry sauce.
  2. Fold the corners of the pastry over the filling and pinch to seal.
  3. Brush the tops of the pastries with the beaten egg.
Baking
  1. Arrange the bites on a baking sheet lined with parchment paper.
  2. Bake for about 15-20 minutes until puffed and golden brown.
Serving
  1. Let cool for a few minutes, then garnish with fresh herbs if desired. Serve warm.
