Cranberry Brie Bites

Ingredients
  

For the Bites
  • 1 package puff pastry (2 sheets, thawed)
  • 8 ounces brie cheese, cut into small squares
  • 1 cup cranberry sauce (store-bought or homemade)
  • 1 egg for egg wash
  • Fresh rosemary or thyme (optional, for garnish)
  • A sprinkle of brown sugar (optional, for extra sweetness)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Roll out your thawed puff pastry on a lightly floured surface. Cut each sheet into 2-inch squares.
  3. Place a small square of brie in the center of each square.
  4. Add about a teaspoon of cranberry sauce right on top of the brie.
  5. Fold the corners of the pastry into the center and seal the edges using a fork.
  6. Whisk the egg in a bowl, then brush it over the top of each pastry.
  7. Line a baking tray with parchment paper and place the pastry pockets on it.
  8. Bake for about 20 minutes or until they are puffed up and golden.
  9. Sprinkle with fresh rosemary or thyme if desired.

Notes

These bites can be assembled a few hours in advance. Leftovers can be stored in an airtight container in the fridge for up to two days and reheated in the oven.
