Preparation
- Preheat your oven to 375°F (190°C).
- Roll out your thawed puff pastry on a lightly floured surface. Cut each sheet into 2-inch squares.
- Place a small square of brie in the center of each square.
- Add about a teaspoon of cranberry sauce right on top of the brie.
- Fold the corners of the pastry into the center and seal the edges using a fork.
- Whisk the egg in a bowl, then brush it over the top of each pastry.
- Line a baking tray with parchment paper and place the pastry pockets on it.
- Bake for about 20 minutes or until they are puffed up and golden.
- Sprinkle with fresh rosemary or thyme if desired.
Notes
These bites can be assembled a few hours in advance. Leftovers can be stored in an airtight container in the fridge for up to two days and reheated in the oven.
