  • 2 lbs ground beef
  • 1 cup milk
  • 1 cup breadcrumbs or crushed crackers for extra crunch
  • 1 onion, finely chopped
  • 2 eggs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp thyme
Glaze Ingredients
  • 1 cup ketchup for the classic meatloaf glaze
  • ¼ cup brown sugar for a sweet kick
  • 1 tbsp mustard adds a bit of zing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, milk, breadcrumbs, chopped onion, eggs, salt, pepper, and thyme. Mix everything together gently until combined.
  3. Form the mixture into a loaf shape.
  4. In a separate small bowl, mix together the ketchup, brown sugar, and mustard.
Baking
  1. Slather the glaze generously on top of your loaf.
  2. Place the meatloaf in a prepared baking dish or a lined loaf pan, and bake for about 1 hour or until cooked through.
  3. Once done, let the meatloaf sit for about 10 minutes before slicing.
  4. Slice and serve with your favorite sides, such as mashed potatoes and green beans.

Notes

Make ahead by assembling the meatloaf mix a day in advance. For picky eaters, add finely chopped veggies like bell peppers or carrots.
